The Towne Winer Chardonnay Barrel Program |

Our best chardonnay has been cool temperature vinted to retain its crispness and aromatics: very well balanced with good length; full bodied, medium dry.
The Process:
Classic Burgundian wine making techniques were utilized: yeast specific strains, extended oak maturation, "sur lies" and battonage in our favourite, well seasoned 300 Liter French oak barrique which enhances the round mouth feel/complexity and butterscotch/vanilla sensory profile.
Cool Temperature Vinification, Minimal Filtration and Fining. The French describe these techniques as non-interventionist - the less the handling the better!

Because of the overwhelming demand and great response for past
harvests, The Winer is vinting this meritage of what the Niagara
Region produces best: world class varietal & French hybrid white
wines grown in cool temperature viticulture.
The Star Grapes are: German Kerner ~ German Riesling ~ French Vidal
Expect the initial taste to be clean and crisp, accompanied by a citrus profile with a burnt almond finish.
Pale straw in appearance, this light-medium bodied wine is dry to very dry with an overall firm structure.
The Process:
This white wine’s signature is vinted in the French Alsace style: fresh, bright, dry, racy/fruity. Cool Temperature Vinification, Minimal Filtration and Fining; Non Oaked

This full bodied, medium dry sauvy is nicely balanced with refreshing acidity and offers flavours of lime zest and green fig on the palate. Appearance of pale straw colour with good length. This noble varietal is sometimes called Fume Blanc when expressed with oak influence;
The Process:
Our non oaked version is cool fermented. This creates a highly aromatic textbook version of sauvignon blanc with a bouquet of citrus and fresh cut grass.

Dry floral and pear on the nose, there’s clean, crisp lime fruit predominant on the palate that’s joined by zesty citrus minerality and spice-infused apple on the lengthy lip-smacking tangy grapefruit finish; light-medium bodied, medium dry.

This light-medium bodied, medium dry wine is a perennial popular blend created by us that the commercial industry has just recently began to pick up on. The wine shows notes of citrus & spice on the nose. The palate maintains the citrus theme with suggestions of lemon drops. Crisp acidity lasts through the satisfyingly long clean finish.

7.5 L/10 L kits: less varietal juice content and total
dissolved solids (TDS*), most concentrate; to be enjoyed younger
16 L Premium kits: more varietal juice content and TDS; less concentrate; requires aging
16 L /18 L Ultra Premium Kits: most varietal juice content and TDS; less concentrate, requires cellaring
23 L Premium Fresh Juice format: 100% varietal juice, maximum TDS, requires cellaring
*TDS: the more TDS, the more aroma and flavour compounds the wine will have
